Other Notes
Varietal: Castillo Naranjal. Grown in Monte Bonito, a small community in the municipality of Marulanda, about an hour from Manzanares in the Colombian Andes. Farms here run 1-3 hectares and are worked by the families themselves; cold nights and warm days at altitude.
This lot is an extension of the Reforest project beyond Manzanares. Most producers in the area still grow mainly Caturra — this is one of the first specialty lots to come out of the community’s renewal and education programs.
Process: cherries handpicked at peak ripeness, aerobic fermentation 12-14 hours in open concrete tanks, depulped and fully washed, then 5 days drying under sun canopies and a 30-day stabilization in GrainPro before export.
