Varietal: Red & Yellow Caturra. El Vergel Estate, farmed by the Bayter family since 1995 — avocado first, then coffee from 2006 after avocado prices fell. They moved to specialty varieties in 2016 with Miguel Jimenez and adopted natural processing with controlled fermentation (including their Koji process) by 2018. Martha Montenegro and Elías and Shady Bayter founded Forest Coffee in 2019 to sell more directly; it now spans about 250 coffee-growing families across four projects in Colombia.

This is a washed EA decaf: fermentation first to build the flavour profile, then caffeine extraction in circular containers of water and ethyl acetate, which bonds with the caffeine and pulls it out while leaving flavour compounds behind. Finishes at 0.1% caffeine.
